Although I'm far from the "snowpocalypse" in New York, a warm hot toddy is still a delightful drink to have before bedtime. My mom makes hot buttered rum batter every holiday season and it always quickly disappears. Knowing that she's introduced many to this treat, I thought I'd share her recipe with you for you to share in your home. You'll be set for a warm cozy night in!
Hot Buttered Rum Batter
1/2 pound (1 cup or 2 sticks) butter, softened
1/2 pound (2 1/2 firmly-packed cups) brown sugar
1/2 pound (4 cups) powdered sugar
1 pint of your favorite vanilla ice cream (blue bell wins in this house)
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
over medium heat, melt butter in a large pot. blend in the brown sugar and powdered sugar. remove from heat and stir in the ice cream, cinnamon, and nutmeg. pour mixture into a freezer-safe container and cover with a lid.
freeze until ready to use.
ready to use? grab a mug - throw in a heaping tablespoon of the batter, a shot of light or dark rum, and boiling water. stir, stir, add whip cream and a stick of cinnamon for garnish and enjoy!!
